Organic & Biodynamic Wine
At Incanto over the last few months, we have made significant changes to our wine list. We have tried to select wines that are representative of their origins, often from small artisan winemakers. For us, wine should reflect not only the soil and grape of the region in which it was grown but also the methods and the passion of the winemaker behind it. Italian wines dominate our wine list and with good reason; we truly believe that good wines can be made all over the world by passionate people.
Organic wine means that the wine is made without the use of any added sulphite. The grapes are being grown and processed without the use of synthetic fertilisers, chemical weed killers, chemical disease-control sprays, insecticides, growth regulators, flavour-enhancers or genetic engineering.
Biodynamic was devised by Rudolf Steiner to ensure that crops are being cultivated in a natural way; taking into account the elemental influence, the cyclical position of the constellations which dictates when certain work take place. Literally, Biodynamic means “movement of life”, in fact in our situation today, it consists in reintroducing life through biodiversity to preserve our fields of production for future generations.
